3 ripe avocados
3 green onions, chopped; or, ½ of a small red onion, diced
1 tomato, seeded and cut into large dice
½ to 1 fresh jalapeno, seeds removed and diced (or a few slices of sliced jarred jalapeno, seeds removed)
Small handful of fresh cilantro, chopped
Juice of ½ of a lime
Slice avocados in half lengthwise, remove seed, and scoop out meat. Add to medium sized bowl and mash lightly with a fork or potato masher. Add onion, tomato, jalapeno, cilantro, lime juice, and salt. Stir together gently and enjoy. Can be refrigerated for 2 days, then it gets kind of brown.
